About the coffee producer
In May, we travelled to Chiang Mai to visit our young and talented partner, Mr. Pun from Aligner Coffee. Like many innovative producers in the region, Pun works directly with local farmers to source fresh coffee cherries, which he processes with care. His coffee journey began just five years ago in his family’s barn, where he still stores, processes, and roasts his coffee. The site also features a charming family-run restaurant, with Pun’s mother as the chef, while Pun himself wears many hats—roaster, barista, and producer.Aligner Coffee
One of Pun’s standout offerings is Autumn Rhythm, a dry processed coffee made from a blend of Typica and Catimor varieties. Grown at 1,300 metres above sea level in the small district of Pa Pae, this coffee delivers notes of fresh mango and grapefruit with a silky mouthfeel. Harvested in early 2025 and carefully dried at Pun’s family barn, Autumn Rhythm is a true reflection of Thailand’s unique terroir and Pun’s dedication to his craft.
About the producing country
When people think of Thailand, images of stunning beaches and warm hospitality usually come to mind. What many don’t realise, however, is that Thailand also produces exceptional coffee. Because less than 10% of Thai coffee is exported, it remains relatively unknown internationally. Strong domestic demand and higher export prices keep much of the harvest within the country.
Thailand’s relationship with coffee is not new. The northern highland regions of Chiang Mai and Chiang Rai, nestled along the borders with Myanmar and Laos, have long been home to coffee cultivation. The altitude, fertile soil, and cooler climate of these areas provide ideal conditions for specialty coffee.
