If you had to pick a rock star of the coffee world, Diego Bermudez from Finca El Paraíso would be one of the first names to come to mind.
Loved by baristas and coffee enthusiasts around the globe, this is the first time Ukkei has purchased green coffee from Diego’s farm, via our trusted partner Falcon. We’re genuinely excited to bring this exceptional coffee to our shelves.
We first encountered Diego’s beautiful coffee around four years ago at Motors, a boutique café in Paris. We immediately fell in love with its distinctive flavour, and it soon became our first choice whenever we spotted it on a coffee menu.
The Rock Star is a brilliant example of Diego’s approach to coffee. His precise, carefully managed farming practices result in a cup that is both clean and complex. In this lot, we taste pomegranate and Manuka honey, with an exceptional syrupy mouthfeel and a long, lingering finish.
About the coffee processing
Diego Bermudez's meticulous processing at Finca El Paraíso elevates this coffee to legendary status. Each step is designed for precision, cleanliness, and flavour preservation—resulting in those vibrant pomegranate and Manuka honey notes with a syrupy mouthfeel.
It all starts with an ozone disinfection treatment before fermentation. This creates a pristine, contaminant-free environment, ensuring only the purest flavours develop.
From there, cherries are depulped immediately and sealed in tanks for 24-36 hours of controlled anaerobic fermentation. Lactobacillus bacteria are introduced to boost smoothness and amplify the sweet, fruity notes.
Next comes a double thermal wash: the beans get a hot immersion at 48°C followed by a cold shock at 4°C. This innovative "thermal shock" locks in delicate aromatics, protecting the coffee's complexity.
Drying then happens in a dehumidifier over 30-40 hours for even, steady moisture loss—preventing defects and ensuring consistency.
Finally, the coffee is stabilised, hulled, and stored in a cool, controlled environment to maintain peak freshness until roasting.
This hands-on approach showcases Diego's obsession with quality, delivering a clean, complex cup that lingers long after the last sip.
